Dorian sounds very jazzy to me, there is a lot of power in chords that utilize that natural 6th. But overall dorian has a very 'smooth' sound for a minor-sounding key, I use it a lot. Phrygian sounds latin or flamenco-like to me... granted those aren't the only uses of the flat second but it really sticks out.
