Why does my high E string sound like a sitar?

Nut slots being too wide or too deep, basically just too worn, may cause the "sitar sound" on open strings.

Why is my high E string flat?

If the frets become worn and flat, your string length will change because the contact point on the fret has changed and your intonation will be off. If you have some deep grooves, or some of your frets are worn down, you may need to have the frets dressed, and re-crowned.

How close should the high E string be to the edge of the fretboard?

causing the e-string to slip off the frets if grabbed too firmly. Rather than pulling the bridge a new saddle slot was cut and the pin holes moved over slightly and that fixed the problem. It should be no less than 1/8" from the edge of the fretboard at the first fret.
