What music uses modes?

Mixolydian and Dorian Modes are often used in blues and gospel music. The Aeolian (minor) Mode is defined as melancholy and sad while Phrygian and Locrian Modes are the go-to Modes for scary, dramatic, and otherworldly sounds.

Can a song be in a mode?

Yes, to both. If the leading tone is not present a key cannot be established. Modal music cannot establish 'a key' in the traditional sense. Aeolian mode as a scale is identical with the natural minor scale.

Can a song have more than one mode?

You can absolutely use different modes in a progression. With the modes you've chosen, it will of course depend on how you explore each mode, but there should be a significant shift in tonality as you play over each chord as long as you use the important or what I call “operative” tones in each mode.
