Should you sidechain a snare?

Sidechain should be used to solve issues in the mix. You can side chain anything you need to. The idea of a loud/good mix is to reduce the elements that overlap in time and frequency. So if you have a huge saw chord and a loud long snare you'll want to side chain so both appear louder.

The idea behind sidechain compression is that you briefly lower the volume of your bass part whenever the kick drum comes in. That gets the bass out of the way for just long enough to hear at least the attack of the kick drum clearly.

What do you sidechain in a mix?

As a mix engineer, using sidechain compression on vocals is the technique that I find myself using the most. By sidechaining the vocal and compressing guitars, keys, backing vocals – or even the everything EXCEPT the vocals… You can subtly create more room in the mix for the vocals to cut through.
