Use sandpaper. Start at about 120 and work up to 320 or so. Once both are stripped as much as you're going to do them, use tru oil. Put it on for maybe 1 minute then wipe it off.

Usually my advice is to simply hit the back of the neck with some 0000 steel wool to remove the gloss from the finish, which can help keep sticky-ness to a minimum. It's easy to do, and it's completely reversible. Occasionally, I'm asked to go beyond this, and to strip the neck down to the bare wood.

Maple doesn't need a finish, structurally. Maple is just really easy to stain with dirt and grime. If you oil and clean it religiously, it'll be fine, but it's just not worth the effort when a thin satin finish isn't really noticeable.
