Choose if you want to record all your screen, or a portion of your screen (highlighted in red below), then click on the Record button. Click on the Options menu. With the Screenshots application? In Quicktime Player, when you do File->New Screen Recording, there is a little down arrow next to the record button. That is how one chooses the audio source. By default it is set to None, so if you don't change it you will record no audio.
