Open the Notes→Transpose... dialog again. Check "By Interval"; select "Up" in the same section; and make sure that "Transpose key signatures" is checked. In the drop-down menu in this section, select the interval that is needed to return the notes to their original pitch.

To change the the enharmonic spelling of a note or group of notes, select the note or notes and press J. Repeatedly pressing J cycles through enharmonic equivalent spellings. If the notes selected are not all the same, the effect may be unpredictable.
