Thanks fellas. Highlight the area you want to record over and click the start / end loop buttons up on the top right. Arm the tracks you want to record over, go to a bar or two before the part and hit play. It will record over the highlighted area.

check your preferences. there is an option that makes it so you can only have one track in record mode at once, just take that off.
